In his 9th class, Jaipur Marriott’s Executive Chef, Sahil Arora asked his Home Science teacher to allow him to take Home Science as a subject and challenged that he could make better cakes than all the girls in his class. Since then, Arora has proved his innocent query as a serious affair.
Arora began his culinary journey 15 years ago in 1998. His areas of expertise include Japanese, Thai and Chinese cuisine and he is also skilled in French and Italian cooking. Arora was cross trained at Hyatt regency Osaka for sushi, sashimi and teppanyaki for a month and was responsible for introducing the same at Hyatt Regency Delhi.
His passion for Thai cuisine is also reflected in his close involvement in the opening of the Oriental Restaurant, 19 Oriental Avenue at Shangri-La and the receipt of the Times Food Award for the best Thai food for two years in a row. In the past, he has promoted Japanese, Lebanese and Italian food.
Chef Arora became a part of the Marriott Family four years ago with Courtyard, By Marriott, Gurgaon and then moved to Jaipur Marriott.
He counts chefs Gordan Ramsey, Jamie Oliver and Ferran Adria amongst his key influences. An alumnus of the Institute of Advanced Management, Kolkata, he enjoys photography in leisure, likes to watch movies and play with his daughter Naisha.
Arora has also hosted 80 episodes for channel Food Food called “Health Mange More.” He is fluent in English and Japanese and hold a Diploma in food and catering from Institute of Advanced Management, Calcutta. Arora did his schooling from Marshall’s, Dehradun.
Before Marriott, he was associated with The Imperial Hotel, New Delhi as Executive Sous Chef. He has also been a part of Shangri-la Hotels and Resorts, New Delhi as Executive Sous Chef and Hyatt Regency, New Delhi, as Chef de partie.
Arora has a fair knowledge of food safety program “HACCP” and has done a food hygiene auditor course with RABQSA.
He is fond of fresh fruit juices and his favourite cuisine is Indian, Italian, and Japanese above all.
