The Indian Federation of Culinary Associations (IFCA) hosted the 6th edition of IFCA International Chefs Conference — a three-day-event — in Chennai, from March 20-22, 2015. The hospitality sector conference was organised to present opportunities to over 650 chefs of Indian and International origin to share insights and network with some major players in the Indian hospitality sector. The mega event was sponsored by cash-and-carry major Metro.
Referring to Metro’s role in associating with IFCA, Rajeev Bakshi, Managing Director, METRO Cash and Carry said, “By partnering with IFCA, we aim to bring together the best of the hospitality industry – in terms of leadership, innovation and skills – to help build a supportive community of culinary artistes. The IFCA International Chefs Conference aims to promote the culinary profession through exchange of ideas and innovations in the world of food and food services. International speakers from various countries were present to exclusively share their knowledge and expertise. Among the speakers were Cornelia Volino (Canada), Chef Uwe Micheel (Dubai), Chef Willment Leong (Thailand), Chef Thomas A Gugler (Jeddah), Chef Charles Carroll (USA), Chef John Sloane (Singapore) amongst many others. Also in attendance were well-known gourmands such as Vir Sanghvi, Inderjit Bajaj, Kiruba Shankar and Kanishka Mazumdar.
With an aim to promote culinary tourism and innovation in Indian cuisine, the panelists discussed on topics like modern culinary procurement, worldchefs certification, schools recognition, canadian culinary insights, trends, diversity and healthy trends in future menus.
